Beef Ragu

INGREDIENTS

1.5 – 1.7kg Aldi marinated beef roast

2 tbsp olive oil

1 brown onion, diced

2 x 400ml bottles pasta sauce

2 cups (500ml) beef stock

4 sprigs fresh rosemary

2 fresh basil sprigs, to serve

40g Parmesan cheese, finely grated, to serve

METHOD

  1. Cut beef into 4 large pieces and pat dry.
  2. Heat 1 tablespoon of olive oil in a multi-cooker, with the sauté function or over high heat in a heavy based pan, and sear beef on all sides until brown. Remove and set aside.
  3. Add the remaining olive oil and the onion and sauté for 2 minutes.
  4. Add the browned beef, pasta sauce, beef stock and rosemary and pressure cook on high for 60-90 minutes, or cover in a 160oC oven for 6-8 hours.
  5. Remove beef from the sauce and shred with two forks.
  6. Return beef to the pot, stir and simmer uncovered for 30 minutes until sauce thickens.
  7. Serve tossed with Pappardelle pasta, Parmesan cheese, and basil leaves.

TIPS

  1. You can also serve with gnocchi, creamy polenta, or mashed potato.
  2. Choose your choice of pasta and pasta sauce for this recipe.
