Pulled Beef Bean Chilli

INGREDIENTS

1.5 – 1.7kg Aldi marinated beef roast

1 tbsp olive oil

1 brown onion, diced

2 x packets taco seasoning

2 x 400g tin crushed tomatoes

2 cups (500ml) beef stock

1 x 400g can kidney beans

4 sprigs fresh coriander

Fresh lime or lemon, to serve

Rice, to serve

METHOD

  1. Cut beef into 4 large pieces and pat dry.
  2. Heat 1 tablespoon of olive oil in a multi-cooker, with the sauté function, or over medium heat in a heavy based pan. Add onion and sauté to soften.
  3. Add the beef, taco seasoning, tomatoes and beef stock and stir. Cover and slow cook on low for 4 hours, then remove lid and simmer for 15-30 minutes to reduce and thicken the sauce. If using the oven, cook covered at 160°C 4 hours, then uncover and cook for a further 15-30 minutes.
  4. Remove beef from the sauce and shred with two forks.
  5. Return beef to the sauce, along with the kidney beans and stir to heat through.
  6. Serve with rice, topped with fresh coriander and a lemon or lime wedge.

TIPS

  1. You can also use this beef in tacos, burritos, tortillas or spooned over baked potatoes.
  2. Use your choice of pre-made taco seasoning or make your own.
