INGREDIENTS
2 x 250g rib eye steaks
1 tbsp olive oil
Salt and pepper
5 tbsp unsalted butter
6 sprigs fresh thyme
5 garlic cloves, peeled & smashed
Grilled cos lettuce wedges to serve
METHOD
- Bring the steak to room temperature and pat dry with paper towel.
- Heat oil in a heavy based pan over high heat. Season each side of the steak generously.
- Cook one side for 2 minutes until a crust forms, then turn.
- Cook for 1 minute, then push the steaks aside and add butter, garlic and thyme.
- When melted, spoon the butter over the steak until cooked to your liking – 2 minutes in total for the 2nd side for medium rare.
- Sear the edges of the steak.
- Transfer to a plate, cover loosely with foil, rest for 5 minutes.
- Serve drizzled with extra butter from the pan and wedges of grilled cos lettuce.
