INGREDIENTS
1.5 – 1.7kg Aldi marinated beef roast
1 tbsp olive oil
1 brown onion, diced
2 x packets taco seasoning
2 x 400g tin crushed tomatoes
2 cups (500ml) beef stock
1 x 400g can kidney beans
4 sprigs fresh coriander
Fresh lime or lemon, to serve

METHOD
- Cut beef into 4 large pieces and pat dry.
- Heat 1 tablespoon of olive oil in a multi-cooker, with the sauté function, or over medium heat in a heavy based pan. Add onion and sauté to soften.
- Add the beef, taco seasoning, tomatoes and beef stock and stir. Cover and slow cook on low for 4 hours, then remove lid and simmer for 15-30 minutes to reduce and thicken the sauce. If using the oven, cook covered at 160°C 4 hours, then uncover and cook for a further 15-30 minutes.
- Remove beef from the sauce and shred with two forks.
- Return beef to the sauce, along with the kidney beans and stir to heat through.
- Serve with rice, topped with fresh coriander and a lemon or lime wedge.
TIPS
- You can also use this beef in tacos, burritos, tortillas or spooned over baked potatoes.
- Use your choice of pre-made taco seasoning or make your own.
